    I'm using stiff buttercream but the icing sticks to the tips &I will not release, thereby destroying the flowers. What can I do to correct this?

      Hey Cathy, Do you mean once you squeeze and release the flower doesn't stick onto the cupcake? if that's the case you need to spread a thin layer of buttercream on the cupcake so the flower can stick to it. If the buttercream is too stiff and it doesn't come out from the icing tip, just leave it in a warm place for 10-15 minutes and try to pipe again, It's possible that the butter was too hard.

    Is there any other decnt recipe not using buttercream. It doesn't stand up in the Australian heat.

      Buttercream can be tricky, I agree, if you are located in a warm country, try not to melt it too much, you can also add more icing sugar to thicken it or even instant pudding. Try to work fast - if you feel the cream is too runny, place it in the fridge for 30 minutes and try to pipe again. Once you reach the right texture it will become much easier to understand next time what exactly you need.

    About what temperature should we be looking for in our buttercream? I like swiss meringue best as it's less sweet, but can't seem to pipe much with it without it melting very quickly. I have the hardest time with my Russian tips. I use Gretchen Price's SMBC by the way, which is a modified Swiss Meringue.
